Bulgogi Syo, famous for its dramatic three-step grilling ritual — sear, torch, and flambé — is turning up the heat with an exclusive collaboration with celebrity chef Choi Hyun-seok. Best known for his bold creativity on shows like Culinary Class Wars and as founder of Choidot, Chef Choi brings his storytelling through food to Bulgogi Syo with a special menu titled Memories on a Plate.
Launching first at Bulgogi Syo Suntec City and Bugis Junction today, 27 September 2025, followed by VivoCity and The Woodleigh Mall on 30 September 2025, this menu features four unique dishes inspired by Chef Choi’s most memorable culinary moments.
A Culinary Journey Through Memories
Each dish captures a moment from Chef Choi’s career, balancing nostalgia, tradition, and innovation while embracing Bulgogi Syo’s fiery dining philosophy of Experience, Artistry and Flavour.
Fresh Omugi Beef Yukhoe Sotbap (S$25.90): Premium Australian barley-fed beef, lightly torched for depth of flavour, paired with fluffy iron-pot rice and vegetables. Diners can enjoy it two ways — solo or mixed into the rice for a layered bite.
Maeun Dwaeji Galbi Jjim with Triple-Cheese Risotto (S$25.90): A hearty pork shoulder stew infused with gochugaru and aromatics, balanced by indulgent risotto with mascarpone, Parmigiano-Reggiano, and mozzarella.
Jang Trio with Omugi Beef Tenderloin (S$39.90): A celebration of Korea’s essential condiments — soy sauce, soybean paste, and chili paste — paired with premium beef cooked on a personal hotstone, elevated by aged doenjang butter, truffle-pickled radish, and Bulgogi Syo’s house gochujang.
Vongole Sujebi (S$21.90, members only): A dramatic squid-ink version of hand-torn Korean noodles served in clam broth, blending rustic Korean comfort food with Italian flair.
“Food is a reflection of our journey. These dishes are not about fusion for fusion’s sake, but about sharing the emotional connections between flavours and the moments that define who we are,” says Chef Choi Hyun-seok.
Beyond the Collaboration
True to Bulgogi Syo’s philosophy, diners remain part of the show. Their Syo Signature Hotstone Steak Cut series continues to let guests sear premium cuts to their preference on imported Korean hotstones, paired with an array of in-house sauces such as sesame oil with salt and pepper, garlic hangari, and the brand’s signature gochujang blend.
With set meals starting from S$12.90, complete with sotbap rice, kimchi salad, and soybean paste soup, Bulgogi Syo offers an interactive, satisfying experience that celebrates both flavour and performance.
