A Culinary Story Told Through Fire

Inspired by the fictional muse Etna—a modern-day heroine exploring lands, flavours, and connections—the restaurant channels her journey into its dishes. The menu is rooted in four elemental techniques: open-fire grilling, fermentation, smoking, and charcoal cooking, delivering bold, layered flavours with locally sourced ingredients like Andaman seafood, Northern Thai herbs, and tropical accents.

Slavic culinary traditions are reimagined with Phuket’s bounty. Highlights include:

King Crab (฿900/100g) and Ribeye Steak (฿620/100g), masterfully fire-grilled.

ETNA Soup (฿620) served with scallop and shrimp inside a chilled ice block for a striking contrast.

Ravioli with Salmon and Pike Caviar (฿650), combining Eastern European heritage with coastal flair.

Beef Burger (฿550) flame-grilled and finished with molten cheese, and Salmon Cutlets with Espuma Mousse (฿570) for a refined seafood indulgence.

Desserts are equally spectacular, from the blooming Rose (฿350) and nutty Truffle Pistachio (฿120) to the refreshing Pavlova with Mango and Passion Fruit (฿340).

The beverage programme features an extensive international wine list, alongside signature cocktails designed to echo ETNA’s storytelling:
