Singapore’s AIR CCCC has launched its refreshed identity, FRESH AIR, introducing a bold new menu shaped by contemporary Asian flavours and a strong Southeast Asian soul. With Head Chef Part Nongnuch now at the helm, the restaurant embraces a deeper sense of community while continuing to innovate through food, culture, and connection.
Located in a sprawling 40,000-square-foot campus at Dempsey Hill, AIR has always been more than a restaurant — it’s a cooking club and cultural hub designed to spark conversation about food, sustainability, and creativity. From its restaurant and garden to its lawn and research spaces, AIR remains a multi-layered destination where dining and discovery go hand in hand.
The FRESH AIR Menu
At the core of this new chapter is a vibrant menu that celebrates shared dining experiences. Guests can enjoy à la carte options or indulge in:
Sharing Selection: S$88 per person for groups of four or more
Chef’s Choice (7-course): S$108 per person, a curated journey of signature dishes
Wine Au Pair: S$59 for three sommelier-selected pours

Ceviche of Local Mahi Mahi (S$35) — with calamansi lime, guava, watermelon radish, and herbs from AIR’s garden.
Whole Grouper (S$65) — dry-aged and charcoal-grilled, served with coconut-lemongrass broth and pineapple dabu dabu.
Glazed Duck Breast with Coriander (S$48) — inspired by Bebek Bakar, paired with kecap manis glaze, green chilli sambal, and grilled sweet potato shoots.
Favourites like the Crispy Oyster Mushrooms (S$30) and Grilled Tiger Prawns (S$38) also return with fresh updates.

Chef Part’s Vision
Chef Part Nongnuch, formerly of Michelin-starred Askorn in Bangkok and Long Chim in Perth, now leads AIR with a philosophy rooted in honesty, memory, and connection. His approach highlights not just flavour, but the culture and personal stories behind every dish.
The evolving kitchen team — including chefs Aiken Low, Yong Tan, and fermentation lead Aameer Ailmchandan — adds even more depth to AIR’s communal dining ethos, bringing unique experiences and creativity to the table.
