The restaurant’s winter offerings focus on depth, restraint and balance, drawing from Fujian roots while welcoming a limited-time Huai Yang collaboration that adds another layer of refinement to the experience.

Winter Seasonal Menu and Chinese New Year Highlights
Ming Pavilion’s winter menu places emphasis on slow-cooked dishes, nourishing soups and carefully prepared seafood, aligning with the season’s preference for warmth and comfort. For Chinese New Year, the restaurant introduces celebratory set menus designed for sharing, featuring symbolic ingredients associated with abundance, longevity and prosperity. Highlights include an auspicious poon choi prepared in the traditional layered style, alongside festive mains and house-made New Year puddings that round off reunion meals on a familiar note.
These menus are structured to cater to family-style dining, making them suitable for both intimate gatherings and larger reunion celebrations during the Lunar New Year period.

Huai Yang Collaboration with Chef Ma Xupeng (15–17 January)
From 15 to 17 January, Ming Pavilion hosts a special three-day collaboration with Chef Ma Xupeng of the one MICHELIN-starred Jiangnan Wok · Rong at Shangri-La Fuzhou. Known for his refined interpretation of Huai Yang cuisine, Chef Ma joins forces with Ming Pavilion’s culinary team to present a series of lunch and dinner menus that highlight the cuisine’s hallmark precision and clarity of flavour.
The collaboration menus explore the intersection of Huai Yang finesse with Minnan influences, featuring delicately prepared seafood, slow-braised meats and thoughtfully balanced soups. Guests can expect dishes that prioritise texture, natural sweetness and clean finishes, offering a contrast to the richer celebratory fare typically associated with Chinese New Year dining.
