For one night only on 16 November 2025, Hong Kong’s acclaimed Cristal Room by Anne-Sophie Pic will host an exclusive culinary showcase with Vivant, the rising star of Shanghai’s dining scene led by Chef Johnny Pham. This high-calibre collaboration celebrates the meeting of French culinary elegance with modern Asian influences.
East Meets West on the Plate
The special dinner will feature a multi-course tasting menu co-created by Cristal Room’s Head Chef Marc Mantovaniand Chef Johnny Pham, formerly of Taian Table and now the creative force behind Vivant. Expect to be taken on a flavour journey that balances bold creativity with refined tradition.
Diners will start with joint creations such as crab tartelettes, oyster with caviar, and an ebi-filled pie tee. Vivant follows up with its signature Symphony of Tuna and flame-grilled Brittany Blue Lobster with coral béarnaise. The Cristal Room brings in their iconic Berlingot pasta and a refined seabass with caviar. Pham’s show-stopping Zhongfa pigeon with huangjiu and truffle leads into the dessert finale: a genmaicha millefeuille with geranium chantilly and ginger.
