From 15 October to 15 November 2025, Singapore diners can savour a unique blend of Irish heritage and modern gastronomy as Bord Bia (The Irish Food Board) launches A Taste of Ireland: Samhain Edition. In partnership with six of Singapore’s top restaurants, the event honours the ancient Celtic festival of Samhain – the original Halloween – by showcasing Ireland’s premium produce through exclusive dishes and curated menus.
A Modern Tribute to Samhain – The Festival Before Halloween
Samhain (pronounced “Sow-in”) dates back over 2,000 years and marked the end of the harvest and the beginning of winter in Celtic tradition. It was a time for communities to gather, feast, and reflect on the transition of seasons – traditions that eventually evolved into the modern-day Halloween. This culinary campaign reimagines that spirit of gathering and storytelling using grass-fed Irish beef, duck, seafood, and dairy.
Exclusive Menus at Top Singapore Restaurants
Carnaby
Chef Adam Penney presents a playful British-Irish menu pairing a hearty confit Irish duck leg with colcannon, wild blackberries and charred sprouts, plus a Shanky Panky cocktail (Born Irish Whiskey and blood orange bitters) inspired by the warmth of Irish pubs.
Boaters Bar at ONE°15 Marina Sentosa Cove
Singapore’s only floating bar leans into Ireland’s land-sea synergy with char-grilled Irish oysters and a rich Irish duck breast served with orange reduction and red wine pear – perfect for waterfront indulgence.
UMMI Beirut
A four-course halal menu celebrates family, beginning with Lebanese lentil soup shots, followed by Ostra Regal oysters with pomegranate molasses, 7-spice duck leg, and a dessert of Cannoli Baklawa with Irish ice cream.
Cygnet by Sean Connolly
This smoky bar-and-grill offers an indulgent take on comfort food with an Irish beef fillet on colcannon, finished with a whiskey cream sauce.
Brasserie Astoria
Set in the Victoria Theatre, Brasserie Astoria’s elegant harvest tribute features aged Irish duck with browned butter hollandaise, salad verte, and spicy pommes frites.
Morsels
While not detailed in the original release, Morsels also participates in this celebration, reflecting Ireland’s values of creativity, provenance, and sustainability.
Championing Irish Sustainability with Origin Green
This celebration isn’t just about taste – it also underscores Ireland’s commitment to sustainability through its Origin Green programme. Over 61,000 Irish farmers and 300 food producers are part of this world-leading initiative to ensure environmentally responsible practices from farm to fork.
Lisa Phelan, Southeast Asia Director at Bord Bia, highlighted the shared values between Irish producers and Singapore’s chefs, noting, “Great food begins with great integrity.”
