Temper Singapore has officially opened its doors at Mondrian Singapore Duxton, introducing a one-of-a-kind dining and drinking destination that blends intuitive wines, inventive cocktails, crave-worthy dishes, and curated soundscapes. Designed as a sensorial playground by the Ebb & Flow Group, the 4,000 sq ft venue offers an intimate yet vibrant escape where wine, food, and music come together seamlessly.

A Bauhaus-Inspired Space

Set across two levels, Temper’s design channels Bauhaus minimalism and cinematic warmth. The upper floor houses a dedicated wine room, while the lower level features a buzzing cocktail lounge. The space is tied together by an arched portal and layered terrace cove ceiling, giving it a fluid, multi-dimensional character.

Wine Without Rules

Led by Wine Director Roberto Duran (formerly of 67 Pall Mall), the wine room houses over 1,200 labels and 2,100 bottles from more than 30 countries, with 250 wines available by the glass. Rather than focusing on formality, Roberto curates wines based on mood and pairing, whether you’re a seasoned collector or simply wine-curious.

Cocktails With Character

The cocktail programme, crafted by consulting bartender June Baek and Head Bartender Kishan Kumar, delivers innovative creations with a playful edge:

Temper’s Cup – A refreshing blend of Hendrick’s Grand Cabaret, strawberry, kiwi, cucumber, and sparkling wine.

Star Fruit Martini – A bold Southeast Asian twist on the classic, featuring vinegar-soaked star fruit brine.

T.T.K. Old Fashioned – Inspired by tutu kueh, this nutty concoction uses peanut butter–washed whisky, sesame, and coconut smoke.

Duxton’s Arts & Culture Collection – A series of cocktails inspired by the area’s rich history, like the Poppy Den(Ardbeg whisky, watermelon, rose) and Jinrikisha (Código Blanco, pineapple, sesame).

Music Meets Mood

The cocktail lounge’s energy is elevated by a bespoke music programme curated by Joshua Pillai, featuring live jazz, deep vinyl sets, funk, soul, and R&B. Guest musicians and DJs like Kaye (DarkerThanWax), Dita Jacob, and Nick Zavior bring an eclectic vibe, ensuring each night at Temper has a unique soundtrack.

Crave-Worthy Dishes

Under Executive Chef Nicolas Tam (of one-Michelin-starred Willow) and Head Chef Ronald Sim (formerly Burnt Ends), the food menu offers comforting yet elevated plates, including:

Red Shrimp Carpaccio with shrimp head emulsion

Crab Roll with tender crab claw meat

Temper Burger with wagyu-blend patty and molten cheddar

French Dip Sandwich layered with Tajima roast beef and served with beef broth

Seafood Tower stacked with oysters, crab, mussels, and crustaceans

Uni Linguine with creamy sea urchin and molten egg yolk

Pastel de Nata – Portugal’s beloved custard tart, served warm

Opening Details

Temper Singapore opens 1 September 2025 at Mondrian Duxton. Operating hours:

Mon–Wed: 5pm – 1am
Thu–Sat: 12pm – 1am
Sun: Closed

From October 2025, Temper will introduce a monthly Adult Brunch (first Saturdays) and a Family Brunch (last Sundays), offering yet another way to enjoy its multi-sensory experience.
