Starting 7 September 2025, Le Pristine Singapore at Grand Hyatt Singapore is reimagining the weekend dining experience with the launch of its Sunday Brunch and Sunday Supper, curated by celebrated Michelin-starred Chef Sergio Herman. Known for his passion for balancing heritage with innovation, Herman invites diners on a culinary journey blending playful creativity with European conviviality.
A Weekend Feast for All Occasions
Sunday Brunch is designed as an abundant sharing experience from 12pm to 3pm, priced at S$135 per person. Highlights include:
Cold selections such as Salad Le Pristine, vitello tonnato, and pumpkin burrata
A premium seafood bar featuring hamachi, tuna, Irish Mor oysters, and gambero rosso with fingerlime
Live stations serving pizzette marinara, ravioli ricotta verbena, and barbecue gambero
A decadent sweet bar with soft-serve desserts, tiramisu, panna cotta, and chocolate tart
For those who prefer a more intimate setting, the Sunday Supper runs from 6pm to 9pm, priced at S$125 per person. Diners can enjoy the same seafood and cold selections from brunch, alongside indulgent mains like Sergio’s Father’s Fish Soup, lamb with eggplant and tomato, seafood orecchiette, and chicken vol-au-vent.
Drinks, Beats, and a Perfect Vibe
Enhance your dining experience with a 2.5-hour free-flow beverage package starting from S$50 per person. Options include refreshing spritzes, classic cocktails, curated wines, and premium champagnes like Dom Pérignon Brut and Moët & Chandon Brut.
To complement the food, a curated DJ programme conceptualised by DJ Eden YC sets the mood with soulful R&B, jazz, funk, and groove, featuring guest DJs like Duri0, James Selva, and Fvder.
Special Appearance at the Singapore Food Festival 2025
As part of the Singapore Food Festival (4–24 September), Le Pristine Singapore will present an exclusive tasting menu priced at S$180, with optional wine or non-alcoholic pairings. Dishes include the Chilli King Crab Pizzette, the signature Father’s Fish Soup, and the playful Baba “Singapore Sling” dessert.
