Ho Lee Fook is set to host a one-night-only dining event on 6 October 2025, bringing together some of the region’s most exciting culinary and cocktail talents. As part of the 50 Best Signature Sessions by The World’s 50 Best Bars, the night will see Executive Chef ArChan Chan join forces with Andrew Ho of Hope & Sesame (ranked No.7 in Asia’s 50 Best Bars 2025) and Mark Lloyd, Head Mixologist at Wing Lei Bar.

Cantonese Flavours Meet Cocktail Innovation

The evening promises a six-course Cantonese-inspired menu, each dish paired with an exclusive cocktail crafted for the occasion. Highlights include:

Drunken Pigeon with Abalone and Plum – paired with Lloyd’s smoky Sanders On A Session, blending mezcal with drunken chicken marinade, Mancino Vermouth Sakura, and umeshu.
Steamed Barramundi with Fermented Chilli and Glass Noodles – matched with Taipa Calling, a bright mix of Langjiu Baijiu and kaffir orgeat.
Charcoal-Grilled MB2 Beef Char Siu – complemented by Ho’s floral Canto Bamboo, featuring Mancino Vermouth Secco with shiitake and chrysanthemum.
Sweet & Sour Kurobuta Pork with Beetroot and Crispy Tea Leaves – paired with Ho’s bold Chifa Sour, a citrus-forward mix of pisco and baijiu.

Chef ArChan Chan shared her excitement for the collaboration:

“Working with renowned bartenders like Andrew and Mark is a chance to explore a completely different dimension of flavour. Cocktails bring nuance, contrast and harmony in ways that surprise even me in the kitchen.”
