Torno Subito at COMO Dempsey, the vibrant Singapore outpost of chef Massimo Bottura, has unveiled a refreshed line-up of menus that blend Italian tradition with Riviera-inspired creativity. Led by Executive Chef Alessio Pirozzi, the reimagined offerings include an updated à la carte menu, a renewed three-course Formula Lunch, and a refreshed Riviera Tour tasting journey.
A Colourful À La Carte Experience
Riso Milano
The new à la carte selection is divided into Antipasti, Primi, Secondi, Vegetariano, and Pizza, each brimming with bold flavours and inventive touches. Highlights include:
Tiger and Beer – crispy fried tiger prawns with craft beer mayonnaise, inspired by seaside kiosks.
Caesar BBQ – smoky baby lettuce with lardo, Parmigiano chips, chicken jus, and crunchy bread.
I Love Pepper Crab – housemade chitarra pasta with Sarawak pepper reduction, Alaskan king crab, and lime.
Riso Milano – saffron-infused Carnaroli rice with braised veal ossobuco, sour butter, and gremolada.
Modena Ribs – slow-cooked Wagyu beef ribs with seasonal vegetable sauce and Villa Manodori dark cherry vinegar.
Vegetariano selections – including Rapa e Arance (pickled turnip, orange, radicchio, zucchini purée) and E Che Cavolo! (baked cabbage with crispy kale).
Pizza lovers can now enjoy the Degustazione platter, featuring five distinct slices, or explore new creations such as Made in Sicily – deep-fried dough pizza with pistachio sauce, Mazara del Vallo prawn tartare, stracciatella, and lemon sauce.
Weekday Formula Lunch
Available Wednesday to Friday from 12 PM to 3 PM at S$68++ per person, the three-course Formula Lunch lets diners choose from seasonal starters, mains, and desserts. Options include Zuppa Fredda (tomato-strawberry gazpacho) and Lingua (charcoal-grilled veal tongue) for starters, mains like Tagliatella or vegetarian E Che Cavolo!, plus indulgent upgrades to Tortellino or Modena Ribs. Dessert choices include the signature Tiramisubito or gelati and sorbetti.

For a culinary journey along Italy’s coast, the six-course Riviera Tour (S$188++) showcases dishes like:
Cosacca – pizza with San Marzano tomato, pecorino foam, and black pepper.
Tonno alla Veneziana – marinated bluefin tuna with onion chutney, Soave reduction, crispy polenta, and caviar.
Pasta e Lenticchie – Mancini pasta with lentil reduction, smoked swordfish belly, sweet pepper, and chive oil.
