Nestled within the lush Mandai Rainforest Resort by Banyan Tree, Forage offers an intimate and immersive dining experience that celebrates the beauty and abundance of nature. Led by Chef de Cuisine Marcus Tan, the restaurant introduces a new seasonal harvest-to-table menu, inspired by ingredients freshly foraged from nature and the resort’s own rooftop edible garden.
“At Forage, we are guided by nature — the changing seasons inspire our menus. My goal is to create a sensory journey that reflects the richness of our surroundings here at the Mandai Wildlife Reserve,” shares Chef Marcus Tan.
Seasonal Harvest and Thoughtful Menus
The dining experience begins with warm, house-made bread and delicate amuse-bouches, leading into five-course and eight-course menus priced at $138++ and $198++ per person, respectively. Guests can choose between:
Discovery Menu (5 courses) – perfect for a curated seasonal introduction
Experience Menu (8 courses) – for a more immersive gastronomic journey
Each menu highlights premium ingredients sourced sustainably, such as free-range poultry from Toh Thye San Farm and farm-fresh seafood from Ah Hua Kelong. Herbs like rosemary, lemon basil, and pandan are hand-picked daily from the resort’s rooftop garden and infused into oils, garnishes, and even pickles for added layers of flavour.
Sustainability at Its Core
Forage champions a low-waste approach by creatively transforming vegetable stems, skins, and other overlooked elements into flavourful stocks, sauces, and garnishes. Working with local producers also minimises food miles while supporting responsible farming practices, ensuring every dish is both environmentally conscious and exceptionally fresh.
A Dining Experience Surrounded by Nature
The restaurant’s interiors reflect the resort’s biophilic philosophy, featuring hand-carved stone tiles depicting native wildlife and floor-to-ceiling windows framing panoramic views of the Upper Seletar Reservoir. Guests are treated to a single, exclusive seating daily at 6:00 pm, perfectly timed to enjoy the sunset reflections on the reservoir, complemented by a welcome glass of champagne.
