Ming Pavilion at Island Shangri-La Hong Kong has launched its brand-new Dim Sum Sunday Brunch, inviting diners to indulge in the soulful flavours of Hokkien cuisine every Sunday from 12pm to 3pm. Crafted by Head Chef Jack Lam, the menu features over 20 dishes blending time-honoured Fujian traditions with premium ingredients, offering guests a choice of six, eight, or ten courses priced from HK$488+10% per person.
At the heart of the brunch is an exquisite selection of handcrafted dim sum. Highlights include steamed fresh prawn dumplings with a zesty pickled spicy yellow capsicum sauce, and indulgent pan-fried taro dumplings filled with minced pork and lobster. Vegetarian options are equally appealing, with combinations like pumpkin, bamboo shoot, and matsutake mushroom, or Agaricus Blazei with sugar pea and spinach. The Xiamen-style popiah, a soft Fujian spring roll, adds a comforting taste of home.
To start, guests can enjoy the Fujian appetisers platter featuring Yongchun aged vinegar jellyfish terrine, Qinghong rice wine-marinated razor clam, and chilled sweet and sour water bamboo strips with pomelo. Soups such as Xiapu seaweed with pork dumpling or simmered tomato broth with matsutake mushroom and bamboo fungus provide a warm interlude, while signature dishes like stir-fried sea whelks with shiso leaves and tea-smoked crispy pigeon showcase the region’s culinary depth.
The meal continues with seasonal greens (served with garlic or crispy pork fat), hearty noodles with sesame paste and pickled daikon, and Fujian-style rice with assorted seafood. Desserts such as sweet taro paste with soymilk pudding and Minnan peach gum with white fungus soup round off the experience on a nourishing note.
Guests can also opt for a two-hour free-flow beverage package at HK$198 per person, featuring premium teas curated by Tea Sommelier Tiffany Chan, SAICHO sparkling teas, and prosecco from Zonin, Veneto.
