Six months since opening, White Shades – Singapore’s only four-storey modern cocktail and dining playground on Boon Tat Street – is ready to unveil a full spectrum of cocktail mastery with its first official drinks menu: COLOURS. In tandem with its launch, the team also unveils new culinary dishes and innovative draft cocktail caddies for guests to enjoy across the four distinct spaces of this vibrant venue.
New Cocktail Menu: COLOURS
COLOURS takes its inspiration from the venue’s name ‘white shades,’ which references the colour spectrum and is segmented into four themes: Clear, Mark, Mood and Flavours. Founder Jiawei Bai and his team have infused each of the 22 drinks with an individual colour, much like an artist with a canvas, to express and enhance their unique qualities.
In the Clear section of the menu, guests will find five clarified cocktails, including elevated favourites from the earlier UnRAW menu. Clear Yellow is made with Maker’s Mark bourbon, sweet corn and a milk-washed mango corn leather inspired by the local Singaporean sweet corn mango dessert, with a dehydrated crisp mango chip to finish.
Mark invites patrons to notice markings alongside the colour, emphasising the quantity of the coloured ingredients in the cocktail. Black IIII is a creamy, innovative twist on the Espresso Martini featuring four black ingredients: Guinness reduction, espresso, Mr Black Coffee Liqueur and housemade burnt coconut oat foam. In contrast, White III brings a lighter, more refreshing riff with vodka, Chardonnay and plummy umeshu, complemented with a crispy milk skin shard.

An appetising sweet and tangy tequila drink featuring rhubarb and sparkling pink coconut water, Fresh Pink from the Mood section delivers a herbaceous kick. This long drink is garnished with a crunchy stick of rhubarb that alters the flavour profile and mouthfeel of the cocktail upon taking a bite.
Flavours playfully influence how people perceive the taste of different hues. Sparkling Pearl, a champagne-based cocktail with pickled onion, fruits and herbs, exudes a briny taste reminiscent of the sea. Meanwhile, the warm and earthy Woody Cedar is crafted with whisky, dry vermouth, agave, and Hinoki, offering flavours of green vetiver.
Alongside cocktails, the Level 2 menu now expands to include a thoughtfully curated and broad wine selection. Guests can enjoy a delightful Prosecco rosé from Scavi & Ray, light-bodied and bursting with fruity, floral notes. More robust choices are also available, such as a velvety full-bodied Pinot Noir with smooth berry notes, from New Zealand’s Central Otago region.
Epicurean Delights Across All Four Levels
The food menu also sees fresh additions, showcasing the continuously evolving journey of White Shades. The Pitan (S$16) is a new, fun addition to the appetiser menu – a silky century egg tofu encased in a flaky puff pastry shell, topped with a salty shoyu sauce. A modern rendition of Sundanese cuisine, the Pesmol (S$28) is a tender barramundi fish with crispy skin, paired with sweet roasted cherry tomatoes and juicy broccolini. A light, vegetarian dish packed full of flavours, the Grilled Eggplant is served with crispy cauliflower fried ‘rice’ topped with salsa verde and a savoury goma sauce. Food dishes are now available for order across all floors.
In a new move, Level 1 now also serves lunch from 11am to 3pm. A great deal for office workers, the S$25 Nett Lunch Set includes a main course, a hot or iced coffee, and a scoop of creamy house-made gelato. Those seeking an efficient yet delicious work lunch can choose highlights such as the Dbl Cheese Burger with jalapeno mayo and caramelised onions, or an unassuming Tagliatelle that comes with a sweet bite of ‘lap cheong’, a Chinese-style sausage, baby spinach and tender shiitake mushrooms.
Yoghurt Strawmato
Pastry chef Farah has been busy whipping up an array of creative plated desserts, priced at S$14 each. Yoghurt Strawmato has a pretty tomato tuile exterior for patrons to crack into, boasting strong flavour punches with a white chocolate yoghurt mousse, a strawmato confit on top of a crisp yoghurt meringue and a bright tomato sponge. Guests looking for a slightly more adventurous dessert can opt for the green curry Rice Pudding, with chilli oil and a zesty coconut ginger pineapple chutney, topped off with crunchy kaffir lime keropok (crackers). The full dessert menu is available on Level 1, while Level 2 and Rooftop will offer a rotating selection each day.

For perfectly Instagrammable moments on the White Shades rooftop, the new Caddie Cocktails (S$55) allows patrons to have their pick of any one of the refreshing cocktails on tap, serving up to six portions (S$16 each if bought individually). Different flavour options include the ‘Elderflower’s Dew’, a bubbly cocktail made with St Germain Elderflower Liqueur, and ‘Vertiver High’, with rich, aromatic, fragrant grassy notes of whisky and vetiver gris. Frothy Draught Beers are also available on tap as well as Sojus (S$15) in Jeju Kyoho grape and lychee flavours.
From Monday through Saturday on the Rooftop, guests are invited to enjoy Golden Hour watching the sun slowly set against the CBD skyline. Mondays extend Golden Hour until closing time, while Tuesdays feature S$8 tacos and Wednesdays S$14 chicken wings. Thursdays call for a gathering with friends to enjoy a Jug of Beer and Sourdough Pizza for just S$45. Saturdays are a steal, offering patrons three oysters and a glass of wine, beer, or a cocktail at S$20 from 5pm to 7pm, and S$30 from 7pm to 9pm.
