Racines, Sofitel Singapore City Centre presents a new à la carte menu showcasing French’s and Singapore’s unique gastronomic heritage. Available for lunch dinner daily, the new menu features a line-up of tempting appetisers, main courses and desserts paying homage to Executive Chef Eric Seow’s wealth of culinary experience.

The highlights of the new menu are the chef’s signatures, each conveying a delicious array of colours, flavours and emotions. Take for instance, the Duck Parmentier (S$62++), which is a twist on the classic Hachis Parmentier, a French casserole of mashed potatoes and leftover beef stew layered with cheese. Evoking the conviviality of potlucks and family dinners, this recipe is given a fancy makeover with the use of confit duck leg, foie gras, and duck rillettes, giving it a rich and buttery mouthfeel. Taking inspiration from the city’s celebrated hawker culture, the signature Prawn Noodles (S$38++) is yet another labour of love, featuring succulent tiger prawns, braised pork ribs and yellow noodles, topped with fresh bean sprouts and vegetables, in an umami-rich prawn broth. For desserts, the elegant Pavlova (S$22++) is a sweet treat not to be missed. Created in the 1920s as homage to the renowned Russian ballerina Anna Pavlova during her tour of Australia and New Zealand, the delicious meringue-based delight is loaded with tropical fruits, yuzu cream, as well as lemon and lime sorbet.

Also new on the menu are a number of items that are sourced through the highest standards in sustainability. One of the sustainably sourced items on the menu is the Black Cod (S$48++), which is procured from a Marine Stewardship Council (MSC) certified fishery with responsible fishing practices respecting the wild aquatic fauna. Keeping with the concept of sustainability, the Garden Salad (S$26++), too, supports the local farming community and features homegrown vegetables that are ultra-fresh, pesticide-free and packed with vitamins that yield great health benefits and nutrition. By utilising ingredients that are sustainably sourced and locally produced, Racines is reducing its contribution to carbon footprint, air miles, and energy usage.
