My aunt doesn’t like kale and she doesn’t know what to do with it. Unfortunately, she keeps getting a bunch of it every week in the organic box of vegetables. So I come in a helped to demolish some of her kale in a humongous salad with spicy peanut sauce.
Ingredients:
3 kale leaves, sliced
1 tomato, diced
1 ear of corn, cooked and removed from the cob
1 tbsp peanut butter
1 tbsp olive oil
1 tsp fish sauce
1 tsp soy sauce
chilli sauce/ tobasco – amount should according to your taste
pinch of sugar
Method:
- Mix the peanut butter, sugar, olive oil and sauces together. Taste and add in whichever sauce/sugar to taste. The consistency should be relatively thick and gloopy, like white glue. It’s ok if it’s a little thicker than that.
- Toss the vegetables with the dressing. The juice from the tomato should dilute the dressing.
- Serve
I love eating this salad for lunch when it’s a hot day because it’s really filling but it’s a cold dish so you will not break out in a sweat, unless you added too much chilli sauce. Simple, easy and the peanut dressing makes you feel that it’s an Asian-inspired salad, no?
